Dehydrated Pulp Characteristics

A lesser-known style of coffee, the dehydrated pulp of the coffee husk, is currently an ecological trend in coffee production. Made in an artisanal way, once the collected ripe coffee is slowly dehydrated, the pulp is slowly dehydrated, until an optimal humidity level is obtained to drink as an infusion. Generally, the coffee infusion has notes of vanilla and cherry, although when the ratio of peel over water increases, the flavor is more reminiscent of strawberry, blackberry and berries.
